Malahide is the DARUMA we always wanted to make next — same izakaya soul, same standards, but with bigger plates, considered design, and the time to do things slowly.

Irish ingredients meet Japanese technique. Slow-cooked, hand-finished, plated with care.

Beef short ribs.
Eighteen hours.

Westford Heifer Beef, slow-cooked for eighteen hours until the bone gives up the ribs willingly. Finished with a soy-based glaze and served on the bone.

Chicken teriyaki.
With Guinness.

Free-range Irish chicken, glazed in a teriyaki sauce we make with Guinness. Served with charred broccoli and rice.
