Irish ingredients meet Japanese technique. Slow-cooked, hand-finished, plated with care.

Eighteen hours.
Westford Heifer Beef, slow-cooked for eighteen hours until the bone gives up the ribs willingly. Finished with a soy-based glaze and served on the bone.

Free-range Irish chicken, glazed in a teriyaki sauce we make with Guinness. Served with charred broccoli and rice.
